Macaroni Cheese

Preparation: 5 minutes

Cooking: 30 minutes

Ingredients

-140g of broccoli spears (you can use normal broccoli)
-250g of macaroni pasta

-75g of cheese sauce powder (I used Terra Vegane)

-450ml of dairy-free milk

-35g of vegan cheddar cheese
-50g of gluten-free breadcrumbs

-Handful of parsley

 

Method

Step 1- Pre-heat the oven to 180 degrees c.
 

Step 2- Fill a large saucepan with water along with a pinch of salt and place over a high heat. Bring to the boil.

Step 3- Steam the broccoli spears in a separate pan for around 5-8 minutes. 

Step 4- Place the macaroni pasta into the large pan with boiling water and allow to cook. Cook as the ingredients on the packet.
 

Step 5- Place the cheese powder into a medium saucepan along with the dairy-free milk. Place over a low heat until thick & creamy, stirring often to prevent sticking. 

Step 6- Once the pasta is cooked, drain and spoon into an oven proof dish.

Step 7- Layer over the broccoli spears, then the cheese sauce, cheese, breadcrumbs and parsley. 

Step 8- Place the mac & cheese into the oven for around 10-15 minutes until the top is crispy and golden brown.

 

Step 9- Remove from the oven and serve hot or enjoy cold with salad.
